Juice and zest the lemon or lime and roughly chop the pineapple.
Add all ingredients to a food processor or blender and blend until smooth.
Pour the mixture into popsicle moulds and freeze overnight. (If you are not using a store-bought popsicle kit. Remove the popsicles from the freezer after 30 minutes to insert the sticks).
To remove popsicles from their mould, run under hot water for 15 seconds and gently twist to remove.
