These scrumptious croquettes are the perfect size to fit into little hands.  Soft and moist on the inside with a crispy shell they can either be enjoyed as a meal on their own or served with steamed veggies such as carrots or broccoli florets.

Pumpkin for Healthy Kids

Pumpkin is loaded with nutrients that can boost your infants immune system. It is high in beta-carotene, which your body turns into fat-soluble vitamin A.  

Studies show that vitamin A can strengthen immune function and help fight childhood infections. Kids with a vitamin A deficiency can have a weaker immune system.

Pumpkin is also high in vitamin C which has been shown to increase white blood cell production, help immune cells work more effectively and make wounds heal faster.

Ingredients

Instructions

  1. Preheat oven to 180°C (350°F). Grease a small baking dish.

  2. Steam the pumpkin until soft for 15 minutes.

  3. Add all ingredients to a blender and blend until soft and creamy. Pour into the prepared baking dish.

  4. Bake for 1 hour until golden and bubbling.

  5. Serve warm. You can safely store this purée in the fridge for up to 4 days.
