Gelatin is made of 98–99% protein. The remaining 1–2% is water and small amounts of vitamins and minerals. Gelatin is the richest food source of the amino acid glycine. Glycine, an amino acid in gelatin, can improve memory and attention. It has also been found to reduce the symptoms of some mental health conditions, such as schizophrenia and OCD.

Instructions

Line a rectangular glass dish baking paper or you can use silican moulds.

Add mango, vanilla, lemon juice and water in a food processor or blender and blitz until smooth.

Add mango mixture to a saucepan, without heat, and sprinkle the gelatin on top and leave to bloom for 5 minutes.

Now turn the saucepan onto low heat, but don’t boil. Whisk continuously for 3 - 5 minutes until the gelatin has completely dissolved.

Pour the mixture into the prepared dish or silicon moulds and transfer to the fridge to let the jelly set (about 2+ hours).

Remove from the fridge and cut into squares. Store in the fridge in air-tight container for up to a week.
