Egg yolks are rich source of iron, this essential mineral thay plays a myriad of roles in your infants long term wellbeing.  But most notably it carries oxygen in the blood around the body and to the brain.

The amount of iron needed by babies is relatively high to support their rapid growth.  As a guide, I recommend including at least one iron-rich food as part of each meal.

Eggs provide many nutrients including iodine, iron, quality protein, omega-3 fat, and vitamins A, D, E, and B12. Eaten as a high-protein breakfast, they can boost a child’s satiety levels and reduce hunger throughout the busy school day, which can help with concentration and energy levels and reduce the need for extra snacks.

Try this delicious recipe your infant will love.



  1. In a small saucepan, warm the coconut milk over medium heat.

  2. In another bowl, whish the egg yolks, vanilla and ground cinnamon.

  3. Add the egg mixture to the warmed coconut milk and continue to cook over low to medium heat, stirring with a wooden spoon until the mixture coats the back of the spoon.

  4. Remove from heat and allow to cool slightly before adding the mashed banana.

  5. Serve at room temperature.
