Choline is a nutrient that most mother’s don’t even know exists, yet it is an incredibly important substance and is often grouped with the B vitamins.

Choline is used to build cell membranes and has a role in producing signalling molecules in the brain, along with various other functions.

A single egg contains more than 100 mg of this very important nutrient.

Whole eggs are among the most nutritious foods on the planet, containing a little bit of almost every nutrient you need. Omega-3 enriched and/or pastured eggs contain more of certain nutrients.

Ingredients

Instructions

  1. Crack the egg and separate the yolk from the white.

  2. In a small bowl, scramble the yolk.

  3. Heat a small frying pan over medium heat, add the butter to pan with the egg yolk. Using a spatula, shape the yolk into a rectangle or square shape.

  4. Remove from the pan and allow to cool and cut into strips for easy handling.
