Place the chia seeds, carrot, ground cinnamon, vanilla extract and milk to a bowl and mix until combined.

Cover and refrigerate for at least 3 hours and preferably overnight.

Before serving, give it a stir to break up any lumps.

Store in the fridge for up to 5 days.
