Sweet Corn Fritters

These delicious crispy fritters are perfectly sized for kids to hold. For additional nutritional goodness, you can serve with with a healthy veggie dips. Whether they are a snack or a light meal, these are something the whole family will love.

Ingredients

  • 500 g sweet corn (frozen or canned)
  • 4 free-range eggs
  • 1 cup flat-leafed parsely (chopped)
  • 1 red capsicum (finely chopped)
  • 2 spring onions (finely sliced)
  • 3 tbsp rice flour (or gluten free flour)
  • 1 pinch sea salt
  • olive oil (for shallow frying)

Instructions

  1. In a food processor, combine the eggs and ½ the corn kernels, salt and blend until a smooth batter.
  2. In a bowl, combine the corn puree and the remaining ingredients and mix until it forms a batter.
  3. Heat the oil in a pan over a low heat and cook spoonful’s of the corn fritter mixture until golden brown on each side.
