Kids love jelly and this is a fun way to get protein and gut-healing gelatin into them!
Children’s Nutritionist – Approved Recipe
- 3 tbsp gelatin
- 1 cup mango cheeks (fresh or frozen)
- 1/2 cup coconut cream
- 1/2 tsp vanilla extract
- 1/2 lemon (juiced)
Instructions
- Line a rectangular glass dish baking paper or you can use silican moulds.
- Add mango, vanilla, lemon juice and water in a food processor or blender and blitz until smooth.
- Add mango mixture to a saucepan, without heat, and sprinkle the gelatin on top and leave to bloom for 5 minutes.
- Now turn the saucepan onto low heat, but don’t boil. Whisk continuously for 3 – 5 minutes until the gelatin has completely dissolved.
- Pour the mixture into the prepared dish or silicon moulds and transfer to the fridge to let the jelly set (about 2+ hours).
- Remove from the fridge and cut into squares. Store in the fridge in air-tight container for up to a week.
