Buckwheat has become a popular food. It is gluten-free and a good source of fibre, and rich in minerals and various plant compounds.
Ingredients
- 1/2 cup buckwheat grouts
- 1 cup coconut milk
- 1/2 cup Blueberries (fresh or frozen)
- 1/2 banana (mashed)
- 1/4 tsp cinnamon powder
Instructions
- Place the buckwheat in a bowl and over with enough water to cover the grouts. Add the lemon juice and stir. Cover the bowl with a tea towel and place in a warm, dry place for 12 hours or overnight.
- Rinse the groats under cold running water and place in a saucepan with the coconut milk, banana, blueberries and ground cinnamon and bring to the boil.
- Reduce heat and allow to simmer for 5 minutes, frequently stirring. You can add water to adjust the consistency if needed.
- Turn off the heat, and cover with a lid and leave to rest for 5 minutes.
- Leftovers can be stored in the fridge for up to 3 days.
