Ingredients
- 2 free-range eggs
- 1/2 cup coconut milk
- 1/4 tsp ground cinnamon
- 1/4 tsp vanilla extract
- 1/2 ripe banana
Instructions
- In a small saucepan, warm the coconut milk over medium heat.
- In another bowl, whish the egg yolks, vanilla and ground cinnamon.
- Add the egg mixture to the warmed coconut milk and continue to cook over low to medium heat, stirring with a wooden spoon until the mixture coats the back of the spoon.
- Remove from heat and allow to cool slightly before adding the mashed banana.
- Serve at room temperature.
