Purple Buckwheat Porridge

Buckwheat has become a popular food. It is gluten-free and a good source of fibre, and rich in minerals and various plant compounds.

Ingredients

  • 1/2 cup buckwheat grouts
  • 1 cup coconut milk
  • 1/2 cup Blueberries (fresh or frozen)
  • 1/2 banana (mashed)
  • 1/4 tsp cinnamon powder

Instructions

  1. Place the buckwheat in a bowl and over with enough water to cover the grouts. Add the lemon juice and stir. Cover the bowl with a tea towel and place in a warm, dry place for 12 hours or overnight.
  2. Rinse the groats under cold running water and place in a saucepan with the coconut milk, banana, blueberries and ground cinnamon and bring to the boil.
  3. Reduce heat and allow to simmer for 5 minutes, frequently stirring. You can add water to adjust the consistency if needed.
  4. Turn off the heat, and cover with a lid and leave to rest for 5 minutes.
  5. Leftovers can be stored in the fridge for up to 3 days.
