Baby Naturopath - Recipe

Egg yolks are rich source of iron, this essential mineral thay plays a myriad of roles in your infants long term wellbeing.  But most notably it carries oxygen in the blood around the body and to the brain.

Ingredients
  • 2 eggs (free-range)
  • 1/2 cup coconut milk
  • 1/4 teaspoon ground cinnamon powder
  • 1/4 teaspoon vanilla extract
  • 1/2 ripe banana (mashed)
Instructions
  1. In a small saucepan, warm the coconut milk over medium heat.

  2. In another bowl, whisk the egg yolks, vanilla and ground cinnamon.

  3. Add the egg mixture to the warmed coconut milk and continue to cook over low to medium heat, stirring with a wooden spoon until the mixture coats the back of the spoon.

  4. Remove from heat and allow to cool slightly before adding the mashed banana.

  5. Serve at room temperature.
