How Coconut Flour Benefits Healthy Children

Coconut flour is commonly used in gluten-free and grain-free foods such as cupcakes, bread, and cookies. Coconut flour is made from coconut flesh that has been dried and ground. The coconut meat is then scraped out, rinsed, grated, and strained to separate the solids from the milk. The solids are then baked at a low temperature until dry before being ground into flour. This white powder looks and feels similar to flour made from grains such as wheat.

Ingredients
  • 1/2 cup coconut flour
  • 2 teaspoons baking flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2/3 cups banana (mashed)
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 2 eggs (whisked)
  • 2 teaspoons vanilla extract
Instructions
  1. Combine all the dry ingredients in a large mixing bowl. In a separate bowl, whisk together the wet ingredients.

  2. Then add the wet to the dry ingredients.

  3. Place batter into muffin tin cups or grease a muffin tin.

  4. Bake at 180 C for 15-20 minutes or until a skewer inserted into the middle of the muffin comes out clean.
