Treat the family to these tasty apple muffins - the kids will love them!
Apples boast many vitamins and minerals, though not in high amounts. However, apples are usually a good source of vitamin C.
Preheat oven to 180C and line a muffin tray with paper liners.
In a large bowl, add the mash banana, eggs, maple syrup, coconut milk and vanilla bean and mix until well combined.
In another bowl, mix together the dry ingredients - oats, oat flour baking powder, cinnamon and salt. Then add the wet ingredients to the dry ingredients and mix until well combined.
Place even amounts of the mixture to the muffin tray. Add the diced apple on the top of each muffin.
Bake for 20-25 minutes or until golden brown on top and cooked through.
